Apparently he did some of the flying, and the other members of the cast before being cast were required to pass the G-training so the sequences could actually be acted upon while experiences real G's. I definitely think the shots are real. They were already doing filming from the backseat on the first Top Gun, but the shots just didn't look good so they opted for a studio rig. The ridiculous part is where they said that it had been 30+ years of service and he had not been promoted to Admiral and was still flying jets. Even if he was a 20 year old in the first movie, that would make him a 50+ year old still flying jets. There's no way he would be medically clears to still be flying jets as somebody over 50.
