Mine here in Canada shows the 512GB version still in stock, but they go in and out.. so it's to be expected. I wonder how they're selling at Gamestop? The Switch has definitely conditioned people to want to be able to take their libraries on the go... and anecdotally I can't even tell you how many people I've seen say something to the effect of "Deck/Ally are now my main gaming platform"...
