Sergio Perez SP11 173 Posted June 26, 2020 Share Posted June 26, 2020 (edited) 1:Buy Steak around 2” thick, this one was 3” 2: Season Generously with Salt and Pepper 3: Cook Steak with indirect heat until Internal Temperature reaches 105 (I choose to use a smoker; light smoke) 4: Sear directly in the grill over flaming hot coals at 600+ degrees for 30-60 seconds per side, this shoulr bring the internal temperature to around 120 5: Take off grill and let the steak sit for a couple minutes, this will bring the internal temperature to 125-130, and will keep the juices from escaping when you start cutting 6: Enjoy Edited June 26, 2020 by Carlos Vela Quote Link to post Share on other sites

A technique I like to do to simplify things (especially when grilling isn't an option) is to sear it on both sides in a grill pan, and then just pop that in the oven for a bit.
